16 slices white or brown bread (sandwich loaf with crusts removed) 1/4 lb. back bacon or ham, chopped 1/2 lb. sharp cheddar cheese, grated 6 eggs 3 cups 2% milk 1/2 tsp. dry mustard salt & pepper & Tabasco to taste 2 Tbsp. butter
Grease a 9x13-inch pan. Cover bottom with 1/2 the bread. Add bacon and cheese, then the remaining bread. Beat eggs, milk, and spices, then pour over top. Cover with plastic and let stand to absorb. Overnight is fine. Melt butter, brush on top. Sprinkle with Special-K for crunch if desired. Bake at 350F for 1 hour or until dry in centre.
