Kathy’s Tempura

Ingredients

Fresh vegetables (broccoli, mushrooms, zucchini, carrots etc.) chopped into bite-sized pieces
Seafood (shrimp, scallops) 
All food pieces must be dry.

Batter:
1-3/4 c. instant blending flour
1 stiffly beaten egg white
1-1/3 c. cold water
1 egg yolk

Method

Beat half of the water with the egg yolk. Add flour, Add rest of water. Heat oil very hot. Fold egg white into batter. Dip vegetables, etc. in batter and fry a few at a time. Drain and serve with rice and assorted sauces.
