Snappy Green Beans


1/2 cup sugar (I usually use less sugar) 
1/2 cup white wine vinegar 
1/4 teaspoon crushed red pepper flakes 
1 garlic clove, minced 
1 pound green beans, ends snipped


  1. Whisk the sugar and vinegar together until sugar has dissolved. Stir in crushed red pepper and garlic. Set the mixture aside to let flavours mellow for 4 hours or longer.
  2. 30 minutes before you're ready to serve the beans, blanch them in boiling water for 1 minute, or until tender but still crisp. Drain. Run beans under cold water and drain again.
  3. Mix beans with the marinade and let the flavours blend for 1.2 hour. Serve.
