Snappy Green Beans
1/2 cup sugar (I usually use less sugar)
1/2 cup white wine vinegar
1/4 teaspoon crushed red pepper flakes
1 garlic clove, minced
1 pound green beans, ends snipped
- Whisk the sugar and vinegar together until sugar has dissolved. Stir in
crushed red pepper and garlic. Set the mixture aside to let flavours
mellow for 4 hours or longer.
- 30 minutes before you're ready to serve the beans, blanch them in
boiling water for 1 minute, or until tender but still crisp. Drain. Run
beans under cold water and drain again.
- Mix beans with the marinade and let the flavours blend for 1.2 hour. Serve.
