Tina’s Black Bean Ful

Ingredients

2 cups dry black beans
8 cups water
1/4 cup olive oil
4 or 5 garlic cloves, pressed
1/2 cup fresh lemon juice
1 1/2 cups chopped fresh tomato
1 cup chopped fresh parsley
salt and pepper to taste

Method

Soak beans over night. Cook 1 1/2 to 2 hours. Drain. While hot, toss with olive oil, garlic, and lemon juice. Add remaining ingredients.
