Croustades 24 slices of very thinly slice white bread 2 Tblsps Butter Filling 3 Tblsps onion finely chopped 1/2 lb. mushrooms finely chopped 4 Tblsp butter 2 Tblsp flour 1 cup whipping cream 3 Tblsp white wine 1/2 tsp salt pinch cayenne 1 Tblsp parsley 3 Tblsp Parmesan cheese
Generously butter muffin pans. Cut a 3" round from each slice of bread and fit into tins. Bake at 400 degrees for 10 mins. Melt butter. Add onions and mushrooms and cook till moisture is evaporated. Sprinkle with flour. Add cream. Stir constantly till it boils. Add wine. Reduce heat and cook for a few minutes more. Remove from heat and stir in salt, parsley and cayenne. Fill shells and sprinkle with Parmesan. Bake at 350 degrees 10 mins. Changes I make: I used Weight Watchers whole wheat bread and cooking spray instead of butter in the first step. In the filling I don't like to chop the mushrooms too fine because they shrink so much in the cooking. Also I use milk instead of whipping cream and increase the cayenne.
