1 1/2 c. Mazola oil 2 c. brown sugar 2 tsp. soda 2 tsp. cinnamon 1 tsp. salt 1 tsp. vanilla 2 c. flour 4 eggs 3 c. grated carrots 1 c. walnuts
Beat oil and sugar very well. Add soda, salt, cinnamon, and vanilla. Add flour and eggs alternately. Fold in carrots and walnuts. Bake for 45 min., at 350F. Cream Cheese Icing 8 oz. cream cheese 1/4 lb. butter 1 lb. icing sugar 1 tsp. vanilla
