Enough to serve 4 (LARGE) servings 2 lb. red cabbage 1 lb. onions, chopped 1 lb. cooking apples, peeled, cored & chopped small 3 tablespoons wine vinegar 3 tablespoons brown sugar 1 clove garlic 1/4 whole nutmeg, freshly grated 1/4 level teaspoons ground cinnamon 1/4 level teaspoons ground cloves 1/2 oz. butter salt & pepper
Remove outer leaves and hard core of the cabbage - shred the rest finely. In a fairly large casserole arrange a layer of cabbage seasoned with salt and pepper then a layer of onions and apples, with a sprinkling of garlic, spices and sugar. Continue with these alternate layers until everything is in. Pour in the wine vinegar, add the butter, cover, and cook very slowly in a low oven (300F, 150C) for 2.5 to 3 hours, stirring once or twice during cooking.
