Carol's Veggie Loaf

Ingredients

1 1/2 cups cooked brown rice
1/4 cup sun dried tomatoes, pre-soaked
1 tablespoon of olive oil
2 chopped onions
4 minced cloves of garlic
2 cups of finely chopped broccoli
1 1/2 cups of finely chopped mushrooms
1 cup of finely chopped cauliflower
1 red pepper chopped
1 bag of spinach (washed and chopped)
3 tablespoons minced fresh basil or equivalent of dried basil
2 tablespoons Parmesan cheese
2 tablespoons cider vinegar
1/2 teaspoon grated lemon zest
1/2 teaspoon salt
1/2 teaspoon pepper
2 eggs

Method

Preheat over to 350. Spray a loaf pan with nonstick spray. In a large frying pan heat oil and sauté onions and garlic. Add remaining vegetables except the spinach. Saute till veggies are tender. Add cooked rice, spinach, sun dried tomatoes, and spices. Let mixture cool slightly then add the 2 eggs. Press into loaf pan and spread 1 small can of tomato paste over top. Bake at 350 for 45 minutes. Let stand 10 minutes before slicing.

Nutrition

Makes 6 servings. This recipe takes a bit of preparation but it is worth it.
