2 1/2 c. slivered cooked ham 2 Tbsp. butter 1 med. green pepper 1 1/3 c. pineapple juice & water 4 Tbsp. vinegar \2 Tbsp. brown sugar 2 tsp. mustard 1/4 tsp. salt dash pepper 2 Tbsp. corn starch 19 oz. can drained pineapple chunks rice: 1 1/3 c. hot water 1/4 tsp. salt 2 Tbsp. chopped onion 1 1/3 c. minute rice
Sauté ham in butter till brown. Stir in green peppers. Combine juice, water and vinegar, Add brown sugar, mustard, salt, pepper and cornstarch. Mix well. Add to ham. Cook and stir till sauce is thickened Cover and simmer 10 min. Add pineapple, Combine remaining ingredients. Make a well in the sauce and pour in the rice mixture. Bring to a boil then simmer covered for 5 min.
