2 cups rolled oats (preferably old fashioned large flake type, but quick cooking works) 2 cups whole-wheat flour (or sub one cup white, one cup whole wheat, or use all white and add 1/3 cup oat bran) 2 tsp. Baking powder 3 eggs, lightly beaten 1 cup brown sugar 2 tsp baking soda 2 cups buttermilk
Preheat oven to 350. Grease a 9" by 5" loaf pan In a large bowl, mix together oats, flour and baking powder. In a medium bowl, whisk together eggs and sugar. In a small bowl, combine buttermilk and baking soda (do this after the pan is prepared!) Pour buttermilk mixture into egg mixture and stir in well Pour liquid ingredients into oats mixture and stir with a wooden spoon until evenly blended Pour into the prepared loaf pan Bake for 50 minutes or until top is golden brown and a cake tester inserted in the center comes out clean
Excellent with cheese or to accompany a salad supper.
